The aim of the information day is to present, among other things, the very significant final results of the research carried out by the company “Ktima Pavlidis” in collaboration with the Department of Molecular Biology and Genetics of the Democritus University of Thrace under the action “Financial Support for Research, Development & Innovation Projects in the RIS3 priority sector” of the Operational Programme “Eastern Macedonia & Thrace 2014-2020“.
The goal of the Pavlidis_Terroir project was the development of higher value-added wines and the promotion of successful Greek varieties with a local “terroir” and a local “signature”.
During the implementation of the project, spontaneous fermentations were tested, along with methods for analysing the indigenous microbiome, such as isolating the DNA of all the natural microbes found on the fruit, isolations of wild yeast strains and micro-vinifications with Assyrtiko must.
The event was followed by a tasting of the distinctive wine produced as part of the Pavlidis_Terroir project.
